Ingredients
Nonstick cooking spray
1 tbsp canola oil, divided
1 lb turkey breast cutlets
1⁄2 cup minced onion
2 garlic cloves, minced
2 tsp grated fresh ginger
3⁄4 cup unsweetened apple juice
1 cup chopped apple
1⁄4 cup raisins
20 dried apricots, chopped
1⁄4 tsp salt
1 tsp cornstarch
1⁄4 cup water
1 cup brown rice, cooked according to directions without salt or fat

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 1⁄2 tbsp canola oil. When oil is hot, add the turkey cutlets and cook 5 to 6 minutes on each side or until cooked through.
2. Remove turkey cutlets from the skillet. Set aside and keep warm.
3. Add onion, garlic, and remaining 1⁄2 tbsp canola oil to the skillet. Sauté for 1 to 2 minutes.
4. Add ginger, apple juice, apple, raisins, apricots, and salt. Bring to a boil. Cover. Reduce heat and simmer for 3 to 4 minutes.
5. In a small bowl, combine cornstarch and water and add to the skillet. Stir 1 minute to thicken.
6. Add the turkey cutlets back to the skillet to heat through.
7. Spoon sauce over turkey cutlets and serve with hot rice.
Makes 4 servings.
