Ladies and gentlemen, brothers and sisters, let's break bread together, sit down at the table together and look at our beloved soul food and southern cooking. Is eating too much of it keeping us diabetic, asthmatic and on dialysis machines? If someone said there's a way to make it healthier but keep it tasty would you listen and try it? Well, there is a way and I invite you to preview my new book Sojourn to Honduras Sojourn to Healing to see the choices.
www.sojourntohonduras.com. For instance, take macaroni and cheese, one of my all time favorite dishes. The next time you make it, try spelt elbow macaroni, almond cheeses, cayenne pepper and sea salt or onion sea salt. Try almond milk instead of regular or skim milk. And how about gravies and batters? Almond flour, chickpea (garbanzo) flour and spelt flour are far healthier than bleached and unbleachedd white flour. Spelt is an ancient natural grain that doesn't have the starch content that other grains do. You can find spelt and almond products at Whole Foods grocery stores or major health food stores. ONE MORE TIP: If you're allergic to peanuts, try almonds and almond butter. Almonds don't have the starch that peanuts do so they're good for everybody. For more tips, including why we should stop using black pepper, read Sojourn to Honduras Sojourn to Healing. It's available at
www.sojourntohonduras.com, amazon.com and barnesandnoble.com. The Creator wants us healthy. Peace and Blessings!
